Meatloaf Mini’s
I found this recipe a while ago while looking for something different to cook for dinner. I thought it was good because it didn’t take a lot of time to bake.
-Ingredients-
½ Cup Ketchup
2 Tablespoons Packed Brown Sugar
½ Cup of Bread Crumbs or 1 Slice of Plain Toast Crumbled Up
1 Onion
1 Egg
1/4 Teaspoon of Season Salt and Pepper
-What To Do-
1. Preheat oven to 450º. In a small bowl mix ketchup and brown sugar together until well mixed; Reserve 1/4 teaspoon for the topping, In a large bowl mix remaining ingredients and ketchup mix until well blended.
2. Spray 13×9 inch pan with cooking spray, shape meat into 12×4 inch rectangle. Cut it lengthwise down the center and cross wise until you have 12 small loaves. Separate each one with a spatula so the edges don’t touch. Brush the tops with the remaining ¼ teaspoon of ketchup.
3. Bake 20-30 minutes or until meat is no longer pink.
This meal is really good with mashed potatoes and steamed baby carrots.
