Lemon Bars

Lemon Bars
-Ingredients-
Crust:
1 Cup All Purpose Flour
½ Cup Powdered Sugar
1 Stick Butter or Margarine
Filling:
1 Cup Granulated Sugar
2 Eggs
4 Tablespoons All Purpose Flour
5 Tablespoons Lemon Juice
-What to Do-
Crust:
1. In a mixing bowl, mix flour and powdered sugar together; add butter in small chunks
2. Mix with your hands until the butter is evenly distributed throughout the mixture
3. Pat evenly into the bottom of an 8×8 inch baking dish; be sure to pat crust a little ways up the side of the dish (the lemon filling will need something to hold on to)
4. Bake in 350° oven for 15-20 minutes
Filling:
1. In a small bowl, add flour and sugar; add eggs and lemon juice (use more or less lemon juice to taste).
2. Stir together well
3. Pour on top of baked crust; return to oven and bake for 25 minutes.
4. Dust top of bars with powdered sugar
8×8 inch pan yields about 9 bars
