Classic Cheesecake
-Ingredients-
Cheesecake
1 bar cream cheese (softened)
¾ cups sugar
½ tablespoon lemon juice
¼ teaspoon salt
2 eggs
½ cup sour cream
Crust
1 1/3 cup vanilla wafer or graham cracker crumbs
¼ cup sugar
¼ cup plus 2 tablespoons butter melted

Making the Cheesecake
1. Mix cream cheese, lemon juice, and sour cream together; add eggs one at a time mixing well between each addition.
2. Add sugar, and salt; mix together well so there are no lumps.
3. Pour mixture into crust
4. Bake at 375° for about 30 minutes-35 minutes. (Cheesecake is done when ¾ inch section in the center is slightly wiggly)
Allow Cheesecake to cool at least an hour before enjoying.
Making the Crust
1. Combine all ingredients and mix well
2. press mixture into bottom and sides of a lightly greased 9 inch pie plate or springform pan
3. Bake 375° for 5 minutes, allow to cool before pouring in cheesecake mixture
