Apple Cinnamon Pancakes
-Ingredients-
Pancakes:
1 Apple (peeled and grated)
¾ Cup All Purpose Flour
1 ¾ teaspoon Baking Powder
½ teaspoon Salt
1 ½ teaspoon Sugar
½ Cup Milk
1 Egg
2 tablespoon Butter (melted)
1 teaspoon Vanilla Extract
Topping:
2 Apples (Approx. ½ apple per pancake -peeled, cored and sliced)
1 tablespoon sugar (if needed, add more 1 teaspoon at a time)
1 tablespoon cinnamon
½ cup water (if needed add more one tablespoon at a time)
-What to do-
Pancakes:
1. Sift together flour, baking powder, sugar and salt; Add egg, milk, vanilla and butter stirring after each addition. Fold in grated apple.
2. Pour onto hot oiled griddle or skillet ¼ cup at a time. Wait for bubbles to form in the center of top; flip and brown on other side (yield 4 pancakes)
Topping:
In a small sauce pan, combine apples, sugar, cinnamon and water. Heat on medium heat until it starts to simmer. Stir; cook until apples are browned and soft.
**Tip**
Experiment with other fruits such as fresh blueberries or strawberries to add variety.
